A delightful dish of bell peppers stuffed with a savory mixture of ground beef, rice, and cheese, perfect for family dinners.

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 lb ground beef or turkey
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup shredded cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds. Lightly brush with olive oil.
  3. Heat a splash of olive oil in a skillet over medium heat. Add the onion and garlic, sauté until softened.
  4. Add the ground beef or turkey to the skillet. Cook until browned and crumbly, draining excess fat.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Stuff each bell pepper with the filling mixture and place them in a baking dish.
  7. Top each pepper with shredded cheese.
  8. Cover the dish with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 10 minutes until the peppers are tender and cheese is bubbly.
  10. Serve warm, optionally with fresh herbs on top.

Notes

Feel free to customize the filling with different meats or veggies. Leftovers can be stored in an airtight container for up to 3 days.
