A warm and comforting stuffed chicken dish filled with spinach, creamy cheeses, and sun-dried tomatoes, perfect for family dinners or cozy nights in.

Ingredients

  • 4 chicken breasts
  • 1 cup spinach, cooked
  • 1 cup cream cheese, softened
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the cooked spinach, softened cream cheese, crumbled feta cheese, chopped sun-dried tomatoes, minced garlic, salt, and pepper.
  3. Carefully cut a pocket into each chicken breast.
  4. Generously stuff each chicken breast with the cheese and spinach mixture.
  5. Heat a splash of olive oil in a skillet over medium heat and sear the stuffed chicken breasts until golden brown on both sides.
  6. Transfer the stuffed chicken to a baking dish and bake for 20-25 minutes, or until cooked through.
  7. Let the chicken rest for a few minutes before slicing and serve.

Notes

For easier stuffing, butterfly the chicken breasts before cutting. Experiment with different cheeses and add herbs for extra flavor.
