A comforting bowl of stuffed peppers soup that combines the flavors of classic stuffed peppers in a nutritious one-pot meal.

Ingredients

  • 4 bell peppers (any color)
  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef or vegetable broth
  • 1 cup cooked rice
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Sauté the onions and garlic until soft and fragrant, about 3-4 minutes.
  2. Add the ground beef or turkey, breaking it up, and cook until browned, about 5-7 minutes.
  3. Stir in the diced tomatoes with their juice and the broth; bring to a simmer.
  4. Add the chopped bell peppers and cooked rice.
  5. Sprinkle in the Italian seasoning, along with salt and pepper to taste.
  6. Simmer on low for 20-30 minutes until the peppers are tender.
  7. Serve hot in cozy bowls, optionally garnished with fresh herbs.

Notes

This soup can easily be adapted with different vegetables and proteins. It stores well in the fridge and freezes beautifully.
