A comforting twist on the classic grilled cheese sandwich with sun-dried tomatoes, bacon, and pesto.

Ingredients

  • Bread (sourdough or your choice)
  • Cheddar cheese (or your favorite cheese)
  • Cooked bacon
  • Sun-dried tomatoes (chopped)
  • Pesto sauce
  • Butter

Instructions

  1. Heat the skillet over medium heat.
  2. Butter one side of a slice of bread generously and place it buttered side down in the skillet.
  3. Layer the cheese, followed by sun-dried tomatoes, bacon, and pesto.
  4. Build the sandwich by topping with another slice of buttered bread, buttered side up.
  5. Cook until the bottom slice is golden brown, then flip to cook the other side until cheese is melted.
  6. Slice and serve warm.

Notes

For extra flavor, consider adding garlic to your pesto or using thick slices of bread for sturdiness.
