  • 2 chicken breasts, diced
  • 1 cup mixed vegetables (bell peppers, broccoli, carrots)
  • 1/4 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through.
  3. Add the minced garlic and ginger, cooking for an additional minute.
  4. Stir in the mixed vegetables and cook until they are tender.
  5. Pour in the sweet chili sauce and soy sauce, stirring to combine and heat through.

Notes
