A cozy and nutritious breakfast cobbler made with sweet potatoes and cottage cheese, perfect for fall mornings.

  • 2 medium sweet potatoes, cooked and mashed
  • 1 cup cottage cheese
  • 1/2 cup rolled oats
  • 1/4 cup maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped nuts (optional)
  • Fresh fruit for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine mashed sweet potatoes, cottage cheese, rolled oats, maple syrup, cinnamon, nutmeg, and vanilla extract. Mix until blended.
  3. Pour the mixture into a greased baking dish, spreading evenly.
  4. Sprinkle chopped nuts on top if desired.
  5. Bake for 25-30 minutes, or until golden and set.
  6. Serve warm, topped with fresh fruits.
