Delicious and fluffy blueberry muffins topped with a crunchy crumble, perfect for breakfast or a snack.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter, cold and cubed
  • 1 tsp ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Combine flour, granulated sugar, baking powder, and salt in a large bowl.
  3. Whisk melted butter, milk, egg, and vanilla extract in another bowl until combined.
  4. Pour the wet mixture into the dry ingredients, stirring gently until just combined, then fold in the blueberries.
  5. Mix brown sugar, rolled oats, 1/4 cup flour, cold cubed butter, and cinnamon in a small bowl until crumbly.
  6. Divide the muffin batter evenly among the muffin cups and sprinkle the crumble topping on each.
  7. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  8. Cool for a few minutes in the pan before transferring to a wire rack.

Notes

For accurate flour measurement, spoon flour into measuring cup instead of scooping. Substitute egg with applesauce or a flax egg if needed.
