A delightful Tiramisu Cake that captures the rich layers and luscious creaminess of traditional tiramisu, perfect for any occasion.

Ingredients

  • 1 cup strong brewed coffee, cooled
  • 1/2 cup granulated sugar
  • 3 large eggs, separated
  • 1 cup mascarpone cheese
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup powdered sugar
  • 1/2 cup heavy cream
  • Cocoa powder for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, combine the coffee and granulated sugar, stirring until dissolved.
  3. In a separate mixing bowl, beat the egg yolks until pale, then add mascarpone and vanilla, and mix until smooth.
  4. In another bowl, mix flour, cocoa powder, baking powder, and salt.
  5. Cream the butter and powdered sugar until fluffy, then add the beaten egg whites. Alternate adding the dry ingredients and the coffee mixture, mixing slowly until combined.
  6. Divide the batter between the prepared pans and bake for 25-30 minutes. Let cool completely.
  7. For the frosting, whip the heavy cream until soft peaks form, then fold in the mascarpone mixture until well combined.
  8. Assemble the cake by layering the coffee-soaked cakes with the mascarpone frosting in between.
  9. Finish with a dusting of cocoa powder on top for that classic Tiramisu look.
  10. Chill the assembled cake in the refrigerator for at least 2 hours before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Freezing options available.
