A delightful crêpes roll layered with velvety mascarpone and enriched with coffee, perfect for any celebration.

Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups milk
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1/2 cup brewed coffee, cooled
  • 1/4 cup cocoa powder
  • Chocolate shavings for garnish

Instructions

  1. In a bowl, whisk together the flour, eggs, milk, sugar, and vanilla until smooth.
  2. Heat a non-stick skillet over medium heat and pour in a ladle of batter, swirling to form a thin crêpe. Cook for 1-2 minutes on each side until lightly golden.
  3. In another bowl, beat the mascarpone and heavy cream until smooth and fluffy.
  4. Spread a layer of the mascarpone mixture on a crêpe, drizzle it with cooled coffee, roll up the crêpe, and repeat.
  5. Place the rolled crêpes on a serving platter, dust with cocoa powder, and garnish with chocolate shavings.

Notes

Let the batter rest for 10-15 minutes for fluffier crêpes. Substitute all-purpose flour with gluten-free flour for a gluten-free version.
