A moist and fluffy coffee cake with a crunchy cinnamon streusel topping, perfect for breakfasts and afternoon snacks.

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup brown sugar
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. Combine the all-purpose flour, baking powder, ground cinnamon, and salt in another bowl.
  4. Mix the dry mixture into the creamed butter and sugar alternately with the milk until just combined.
  5. Create the streusel topping by mixing brown sugar, ground cinnamon, and chopped nuts in a separate bowl.
  6. Layer half of the cake batter into the prepared pan, then sprinkle half of the streusel topping over it.
  7. Add the remaining batter and smooth it out, topping with the rest of the streusel mixture.
  8. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. Let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

Store leftovers in an airtight container at room temperature for up to three days. For longer shelf life, refrigerate for up to a week or freeze for up to three months.
