A nostalgic and hearty unstuffed pepper skillet filled with vibrant flavors and comforting textures, perfect for busy weeknights or cozy weekends.

  • 1 lb ground beef (or turkey)
  • 4 bell peppers, chopped
  • 1 onion, diced
  • 2 cups cooked rice
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup shredded cheese
  • 2 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Add the diced onion to the skillet and sauté until it turns translucent.
  3. Add the ground beef (or turkey) to the pan and cook until browned, breaking it apart as it cooks.
  4. Stir in the chopped bell peppers, letting them soften in the heat.
  5. Mix in the diced tomatoes, cooked rice, garlic powder, Italian seasoning, salt, and pepper.
  6. Allow everything to simmer for about 10 minutes until the peppers are tender.
  7. Top the skillet with shredded cheese, covering until melted.
  8. Serve hot, scooping out generous portions.

Notes

Store leftovers in an airtight container for up to three days. Can be reheated in the microwave or over a stovetop.
