Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup bread flour
  • 1/4 cup granulated sugar
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 tsp salt
  • 1/2 tsp ground cinnamon
  • 3/4 cup whole milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup brown sugar
  • 1 tbsp ground cinnamon
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 12 tbsp milk for icing

Instructions

  1. Combine the Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, bread flour, granulated sugar, active dry yeast, salt, and ground cinnamon. Whisk them together to evenly distribute all the dry ingredients.
  2. Heat the Milk and Butter: Gently warm the whole milk and melt the unsalted butter together, ensuring it’s not too hot—just warm enough to activate the yeast.
  3. Pour the warm milk mixture into the bowl with the dry ingredients. Crack in the large egg, and mix everything together until it forms a rough dough.
  4. Transfer the dough to a floured surface and knead it for about 5-10 minutes, working it until it’s smooth and elastic.
  5. Place the dough in a lightly greased bowl and cover it with a clean kitchen towel. Allow the dough to rise in a warm place for about 1 hour, or until it has doubled in size.
  6. Once the dough has risen, turn it onto a floured surface and roll it out into a rectangle, about 1/4 inch thick. Spread softened butter all over the dough.
  7. In a separate bowl, mix the brown sugar and additional ground cinnamon, then sprinkle this mixture evenly over the buttered dough.
  8. Starting from one long edge, roll the dough tightly into a log. Cut it into 12 equal slices and place them in a greased baking dish.
  9. Cover the rolls with a towel and let them rise for another 30 minutes.
  10. Preheat your oven to 350°F (175°C). Once the rolls have risen, pop them in the oven and bake for 25-30 minutes.
  11. While the rolls bake, mix powdered sugar with milk to create a smooth icing. Drizzle the icing generously over the warm rolls once they come out of the oven.
