A delightful dessert combining the tropical flavors of dragonfruit and creamy coconut milk, with chewy sago pearls for texture.

Ingredients

  • 1 cup sago pearls
  • 2 cups water
  • 1 ripe dragonfruit, pureed
  • 1 cup coconut milk
  • 1/2 cup sugar (or to taste)
  • Fresh mint leaves for garnish
  • Chopped fruit for topping (optional)

Instructions

  1. Soak the sago pearls in water for about 30 minutes, then drain.
  2. Bring 2 cups of water to a rapid boil. Add the drained sago pearls and cook until transparent, about 10-15 minutes.
  3. Drain the cooked pearls and rinse under cold water.
  4. In a separate bowl, mix pureed dragonfruit, coconut milk, and sugar until combined; adjust sugar to taste.
  5. Add the cooled sago pearls to the dragonfruit mixture and stir gently.
  6. Chill the mixture in the refrigerator for at least 1 hour.
  7. Serve in bowls garnished with mint leaves and optional chopped fruit.

Notes

For a creamier texture, increase the coconut milk. Experiment with different fruits for variety.
