A comforting wild rice soup bursting with flavor, perfect for chilly nights.

Ingredients

  • 1 cup wild rice
  • 8 cups vegetable or chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup cream or coconut milk (optional)

Instructions

  1. Rinse the wild rice under cold water. In a large pot, combine wild rice and broth, and bring to a boil. Reduce heat and simmer for 45-50 minutes until rice is tender.
  2. In another pot, sauté onions, garlic, carrots, celery, and mushrooms until they soften, releasing their delightful aromas.
  3. Add the sautéed vegetables to the pot with the wild rice, allowing the flavors to mingle.
  4. Stir in thyme, salt, and pepper. If desired, add cream or coconut milk for an extra touch of creaminess.
  5. Simmer the soup for an additional 10-15 minutes to let all the ingredients blend beautifully.
  6. Serve the soup hot in bowls, and enjoy the warmth spreading through you!
