A vibrant salad featuring grilled shrimp, fresh greens, and a zesty marinade for a delightful Mediterranean meal.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons balsamic vinaigrette

Instructions

  1. In a bowl, combine the olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the shrimp and let it marinate for 15 minutes.
  2. Preheat your grill or grill pan over medium-high heat.
  3. Once the grill is ready, place the shrimp on it and grill each side for about 2-3 minutes.
  4. In a large salad bowl, combine the mixed greens, halved cherry tomatoes, sliced cucumber, thinly sliced red onion, and crumbled feta cheese.
  5. When the shrimp are ready, place them on top of the salad and drizzle with balsamic vinaigrette.
  6. Gently toss the salad together and serve immediately.

Notes

Serve with garlic bread or quinoa and a cool drink. Store shrimp and salad separately for leftovers.
