A comforting one-pan meal featuring chicken sausage, penne pasta, and fresh vegetables, perfect for busy weeknights.

  • 1 lb chicken sausage, sliced
  • 2 cups cherry tomatoes, halved
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 4 cups spinach
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. In a large skillet, heat a bit of olive oil over medium heat.
  2. Add sliced chicken sausage and cook until browned.
  3. Add minced garlic and diced bell pepper, sautéing until softened.
  4. Stir in cherry tomatoes, chicken broth, and Italian seasoning.
  5. Bring to a boil, then add penne pasta.
  6. Reduce the heat to a simmer, cover, and cook until the pasta is al dente, about 10-12 minutes.
  7. Stir in spinach and cook until wilted.
  8. Season with salt and pepper to taste.
  9. Serve with grated Parmesan cheese on top.
