1-Pan Bold Honey BBQ Chicken Rice

A comforting one-pan meal featuring succulent chicken glazed with BBQ sauce, served over tender rice and mixed vegetables.

Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Sear the chicken in a large skillet over medium heat for about 5 minutes on each side until browned.
  2. Whisk together the BBQ sauce and honey in a small bowl, then pour it over the seared chicken.
  3. Add the rice and chicken broth to the skillet, stirring gently to combine.
  4. Bring the mixture to a simmer, then cover and reduce heat to low. Cook for about 20 minutes.
  5. Add the mixed vegetables on top during the last 5 minutes to steam.
  6. Fluff the rice with a fork after letting it sit for 5 minutes. Serve warm!

Notes

For extra flavor, marinate the chicken in BBQ sauce before cooking. Feel free to mix vegetables as desired.
