A comforting one-pan meal featuring smoky sausage, colorful vegetables, and flavorful rice that’s quick to prepare and delightful to eat.

  • 1 lb smoked sausage, sliced
  • 1 cup long-grain white rice
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 14.5 oz can diced tomatoes (undrained)
  • 2 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste

Instructions

  1. Brown the sausage: Heat olive oil in a large skillet over medium heat. Add sliced sausage and brown for about 5 minutes until nicely caramelized.
  2. Sauté the vegetables: Stir in the diced onion and bell peppers; sauté for another 5 minutes until softened and fragrant.
  3. Add the garlic: Add minced garlic and cook for an additional minute until fragrant, allowing those beautiful flavors to meld.
  4. Toast the rice: Stir in the rice, toasting it for about 2 minutes to give it a delicious nutty flavor.
  5. Combine the ingredients: Pour in the diced tomatoes with their juices, chicken broth, and Cajun seasoning; mix well to combine all the ingredients.
  6. Simmer to perfection: Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20 minutes until the rice is tender and has absorbed the flavor.
  7. Let sit and fluff: Remove from heat; let sit covered for an additional 5 minutes before fluffing with a fork to separate the rice grains.

Notes

This dish pairs wonderfully with a green salad or garlic bread. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
