A comforting fusion of chicken parmesan and mac & cheese, this dish is creamy, rich, and easy to make in one pot.

  • 2 chicken breasts, diced
  • 8 oz elbow macaroni
  • 1 cup marinara sauce
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Sauté the Chicken: Heat olive oil in a large pot over medium heat. Add the diced chicken, seasoning generously with salt, pepper, garlic powder, and Italian seasoning. Cook for 5-7 minutes until the chicken is no longer pink.
  2. Stir in the Pasta: Stir in the elbow macaroni, marinara sauce, chicken broth, and heavy cream. Bring the mixture to a boil.
  3. Simmer to Perfection: Once boiling, reduce the heat to low and cover the pot, allowing it to simmer for 10-12 minutes until the pasta is al dente.
  4. Melt in the Cheeses: Remove the pot from the heat, and stir in the mozzarella and Parmesan cheese until they melt and create a creamy sauce.
