1-Pot Creamy Cajun Chicken Alfredo

A warm, creamy pasta dish that combines Cajun spices and tender chicken for a quick and satisfying meal, all made in one pot.

  • 1 lb chicken breast, sliced
  • 12 oz fettuccine or penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tbsp Cajun seasoning
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced chicken, season with salt, pepper, and 1 tbsp Cajun seasoning; cook until browned (5-7 minutes). Remove and set aside.
  2. In the same pot, sauté diced onion and bell pepper for 3-4 minutes until softened; add minced garlic and cook an additional minute.
  3. Pour in chicken broth and bring to a simmer.
  4. Add pasta and remaining Cajun seasoning; cook according to package instructions (10-12 minutes), stirring occasionally.
  5. Reduce heat to low; stir in heavy cream and Parmesan cheese until melted and creamy.
  6. Return chicken to the pot; mix well and adjust seasoning if needed.
  7. Serve hot, garnished with fresh parsley if desired.

Notes

For a creamier sauce, use freshly grated Parmesan cheese. Feel free to substitute chicken with shrimp or vegetables for a different option.
