1-Skillet Smoky Cajun Sausage Pasta

A quick and comforting one-skillet meal featuring smoky Cajun sausage and creamy pasta, perfect for busy nights.

Ingredients

  • 12 oz penne pasta
  • 1 lb Cajun sausage, sliced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tsp Cajun seasoning
  • Olive oil for cooking

Instructions

  1. Sauté the sausage: In a large skillet over medium heat, drizzle olive oil and sauté the sliced Cajun sausage until browned (about 5-7 minutes). Remove and set aside.
  2. Sauté the veggies: In the same skillet, add diced bell pepper, onion, and minced garlic; sauté until softened (3-5 minutes).
  3. Stir in the diced tomatoes (with their juices), chicken broth, heavy cream, Cajun seasoning, and uncooked penne pasta.
  4. Raise the heat and bring the mixture to a boil.
  5. Reduce heat to low; cover and simmer until the pasta is al dente (12-15 minutes), stirring occasionally to prevent sticking.
  6. Return the cooked sausage to the skillet. Mix well and season with salt and pepper to taste.
  7. Serve warm, garnished with chopped parsley if desired.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Add a splash of chicken broth when reheating. This meal also freezes well.
