A quick and vibrant pasta dish featuring broccolini and a refreshing lemony sauce, perfect for busy weeknights.

Ingredients

  • 8 oz pasta (such as spaghetti or fettuccine)
  • 1 bunch broccolini, trimmed
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 lemon, juiced and zested
  • Salt and pepper, to taste
  • Parmesan cheese, for serving (optional)

Instructions

  1. Cook pasta according to package instructions in salted water. During the last 2 minutes, add the broccolini to the pasta water.
  2. In a pan, heat olive oil over medium heat and add minced garlic. Sauté until fragrant, stirring to avoid burning.
  3. Drain the pasta and broccolini, then add them to the pan with garlic.
  4. Stir in lemon juice and zest, and season with salt and pepper to taste. Toss until everything is well combined.
  5. Serve immediately, topped with Parmesan cheese if desired.

Notes

For a heartier option, serve alongside grilled chicken or shrimp, and pair with a light salad.
