Quick and delicious Mediterranean-style pita pockets filled with seasoned ground beef, fresh veggies, and creamy feta.

Ingredients

  • 1 lb ground beef
  • 4 pita pockets
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1 cup lettuce, shredded
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 teaspoon dried oregano

Instructions

  1. Brown the beef in a skillet over medium heat until browned. Be sure to break it up with a spatula for even cooking. Once it’s no longer pink, drain the excess fat.
  2. Stir in the olive oil, lemon juice, oregano, salt, and pepper. Let it simmer gently for a moment to blend the flavors.
  3. Warm the pita pockets in the oven or microwave until soft and pliable.
  4. Fill each pita pocket with the beef mixture, followed by the cherry tomatoes, cucumber, red onion, lettuce, feta, and olives.
  5. Serve immediately and enjoy your delicious creation!

Notes

These pita pockets are wonderful paired with tzatziki sauce or a Greek salad.
