Delicious Apple Crumble Cupcakes that combine the classic flavor of apple pie with the convenience of cupcakes, perfect for autumn gatherings.

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup diced apples
  • 1/2 cup brown sugar
  • 1/2 cup oatmeal
  • 1/4 cup flour
  • 1/4 cup butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C). Line a cupcake tin with cupcake liners.
  2. In a bowl, mix together 1 cup of flour, 1/2 cup of granulated sugar, 1 tsp of baking powder, 1/4 tsp of salt, and 1/2 tsp of cinnamon.
  3. Cream together 1/2 cup of softened unsalted butter until smooth. Add in 2 large eggs and 1 tsp of vanilla extract.
  4. Gradually incorporate the flour mixture into the wet ingredients. Gently fold in 1 cup of diced apples.
  5. Spoon the batter into the prepared cupcake liners, filling each about 2/3 of the way full.
  6. In a small bowl, combine 1/2 cup of brown sugar, 1/2 cup of oatmeal, 1/4 cup of flour, and 1/4 cup of melted butter.
  7. Generously sprinkle the crumble mixture over each cupcake.
  8. Bake in your preheated oven for 18-20 minutes or until a toothpick comes out clean when inserted.
  9. Allow the cupcakes to cool for a few minutes in the tin before transferring them to a wire rack.

Notes

These cupcakes pair wonderfully with vanilla ice cream or whipped cream, and can be stored in an airtight container at room temperature for up to three days.
