Delightful biscuit sandwiches combining the essence of apple pie with flaky biscuits, perfect for autumn gatherings.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup sugar
  • 1/2 cup cold butter, cubed
  • 3/4 cup milk
  • 2 cups apples, peeled and sliced
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • Whipped cream (optional, for serving)

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Mix together the flour, baking powder, salt, and sugar in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the milk until just combined.
  5. Roll out the dough to about 1/2 inch thick and cut out circles.
  6. Mix the sliced apples with brown sugar, cinnamon, and lemon juice in another bowl.
  7. Take a spoonful of the apple mixture and place it on half of the dough rounds, then top with another round.
  8. Bake for 12-15 minutes until golden brown.
  9. Serve warm with whipped cream if desired.

Notes

Best enjoyed fresh, but leftovers can be stored in an airtight container in the fridge for up to 2 days.
