  • 2 lbs chicken, cut into pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, chopped
  • 2 teaspoons curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • Salt to taste
  • 1 cup coconut milk
  • Fresh cilantro for garnish

Instructions

  1. Heat the oil in a pan over medium heat. Add the cumin seeds and let them sizzle, releasing their aromatic essence.
  2. Add the finely chopped onions to the pan and sauté until golden brown.
  3. Stir in the minced garlic and grated ginger, cooking for another minute.
  4. Add the chopped tomatoes and cook until softened.
  5. Mix in the curry powder, turmeric, coriander, and salt.
  6. Add the chicken pieces and stir to coat with the spices.
  7. Pour in the coconut milk and bring to a gentle simmer.
  8. Let the curry cook for about 20-25 minutes until the chicken is tender.
  9. Garnish with fresh cilantro before serving.
