  • 2 tablespoons curry powder
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch piece ginger, grated
  • 1 bell pepper, chopped
  • 2 scallions, chopped
  • 12 Scotch bonnet peppers (to taste)
  • 1 can coconut milk
  • 2 cups chicken broth
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Marinate the chicken: In a large bowl, season the chicken pieces with salt, pepper, curry powder, garlic, and ginger. Let it marinate for at least 1 hour or overnight for better flavor.
  2. Sauté the veggies: Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and bell pepper, and sauté until softened.
  3. Brown the chicken: Add the marinated chicken to the pot and cook until browned on all sides.
  4. Combine with coconut milk: Stir in the coconut milk, chicken broth, scallions, and Scotch bonnet peppers. Bring to a simmer.
  5. Simmer to perfection: Cover and reduce the heat to low. Cook for about 30-40 minutes, or until the chicken is tender and cooked through.
  6. Adjust the seasoning with additional salt or pepper if needed.
