A creamy, delicious potato salad loaded with crispy bacon, perfect for summer BBQs and potlucks.

Ingredients

  • 6 large potatoes, peeled and diced
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 8 slices of cooked bacon, crumbled
  • 1 cup celery, chopped
  • 1 cup green onions, sliced
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Boil the diced potatoes in salted water until tender, about 15 minutes. Drain and let cool.
  2. In a large bowl, combine mayonnaise and sour cream. Mix them until smooth for that creamy dreaminess!
  3. Once the potatoes have cooled, add them to the bowl along with the crumbled bacon, chopped celery, sliced green onions, and shredded cheddar cheese.
  4. Stir gently to combine all ingredients. Season with salt and pepper to taste.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld beautifully.
