Jalapeño Popper Eggrolls Bacon-Wrapped Bites

Delicious bites that combine the creaminess of jalapeño poppers with the crunch of egg rolls, all wrapped in savory bacon.

Ingredients

  • 8 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 3 whole jalapeños, seeded and diced
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 12 sheets egg roll wrappers
  • 12 strips bacon
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper or foil.
  2. Combine the softened cream cheese, shredded cheddar cheese, green onions, diced jalapeños, garlic powder, salt, and black pepper until smooth.
  3. Lay one egg roll wrapper on a clean surface.
  4. Place about 2 tablespoons of the creamy filling in the center of the wrapper.
  5. Fold the bottom corner of the wrapper over the filling, tuck in the sides, and roll up tightly.
  6. Wrap one strip of bacon around each filled egg roll, securing the ends underneath.
  7. Brush each bacon-wrapped bite with vegetable oil and place them seam side down on the prepared baking sheet.
  8. Bake for 20 to 25 minutes, or until the bacon is crisp and the wrappers are golden brown.
  9. Remove from the oven and let cool for 5 minutes before serving.

Notes

Serve with ranch dressing, spicy aioli, or zesty salsa. Store leftovers in an airtight container for up to 3 days.
