A cozy and comforting breakfast dish made with rolled oats and juicy blueberries, perfect for meal prep.

Ingredients

  • 2 cups rolled oats
  • 2 cups milk (or non-dairy alternative)
  • 1 cup blueberries (fresh or frozen)
  • 1/4 cup maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 cup chopped nuts (optional)
  • 1 tablespoon melted butter or coconut oil (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the rolled oats, baking powder, salt, and cinnamon in a large bowl.
  3. Mix together the milk, maple syrup or honey, vanilla extract, and melted butter or coconut oil in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until coated.
  5. Fold in the blueberries and nuts if using.
  6. Transfer the mixture to a greased baking dish, spreading it evenly.
  7. Bake for 30-35 minutes or until the top is golden and set.
  8. Let it cool for a few minutes before serving warm.

Notes

Serve with a drizzle of maple syrup, yogurt, or fresh fruit. Store leftovers in an airtight container for up to 4 days.
