Ingredients

  • 4 large eggs
  • 200g feta cheese
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional) for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the feta cheese in the center of a baking dish and surround it with the cherry tomatoes and spinach.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Make wells in the mixture and crack the eggs into each well.
  5. Bake for about 20-25 minutes, or until the eggs are set.
  6. Garnish with fresh herbs if desired and serve warm.
