A simple yet delightful baked feta pasta that combines creamy feta cheese with sweet roasted cherry tomatoes, creating a comforting and flavorful dish.

Ingredients

  • 200g pasta (e.g., penne or fusilli)
  • 200g feta cheese
  • 250g cherry tomatoes
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine cherry tomatoes, feta cheese, minced garlic, and olive oil in a baking dish. Season with salt and pepper.
  3. Bake for about 30 minutes or until the tomatoes are soft and feta is golden.
  4. Cook the pasta according to package instructions until al dente.
  5. Mix the melted feta and tomatoes once baking is done.
  6. Combine the cooked pasta with the sauce in the baking dish and mix well.
  7. Garnish with fresh basil before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of water to keep the pasta moist.
