A warm and comforting baked oatmeal recipe, perfect for cozy mornings or any time of day.

  • 2 cups rolled oats
  • 1/2 cup milk (or milk alternative)
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup applesauce (or mashed bananas)
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup berries or dried fruit (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish to prevent the baked oatmeal from sticking.
  2. In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt. Stir until everything is evenly distributed.
  3. In another bowl, whisk together the eggs, milk, brown sugar, vanilla extract, and applesauce.
  4. Pour the wet ingredients into the bowl with the dry ingredients and mix until everything is well combined.
  5. If you’re feeling adventurous, stir in those chopped nuts and your choice of berries or dried fruit.
  6. Pour the oatmeal mixture into your prepared baking dish, spreading it evenly.
  7. Bake for 25-30 minutes, or until the top is set and golden brown.
  8. Once baked, serve it warm.
