A simple yet delicious baked chicken topped with creamy queso and salsa, perfect for a weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup salsa (your choice of mild or spicy)
  • 1 cup queso dip (store-bought or homemade)
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Optional: sliced jalapeños for added spice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper to create a spice blend.
  3. Pat the chicken breasts dry with paper towels and rub the spice blend evenly over both sides of each chicken breast.
  4. In a large oven-safe skillet, heat a tablespoon of olive oil over medium heat. Add the seasoned chicken breasts and sear for about 3-4 minutes on each side until golden brown.
  5. Remove the skillet from the heat. Pour the salsa evenly over the chicken breasts.
  6. Carefully spoon the queso dip over the salsa-covered chicken.
  7. Sprinkle the shredded cheddar cheese generously on top of the queso dip.
  8. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C).
  9. Once baked, remove from the oven and let it rest for about 5 minutes.
  10. Garnish with chopped fresh cilantro and optional sliced jalapeños before serving.

Notes

Pair with rice, tortillas, or a fresh salad. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
