A simple and delicious baked salmon dish paired with fresh asparagus, combining wholesome flavors perfect for any dinner.

Ingredients

  • 4 salmon fillets
  • 1 bunch asparagus, trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, sliced
  • Salt and pepper to taste
  • Fresh dill or parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the asparagus on a baking sheet and drizzle with 1 tablespoon of olive oil, the minced garlic, salt, and pepper. Toss to coat.
  3. Add the salmon fillets on the same baking sheet, drizzle with remaining olive oil, and season with salt and pepper. Top each fillet with lemon slices.
  4. Bake for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  5. Serve garnished with fresh dill or parsley.

Notes

For extra crispiness, broil for the last minute of cooking. Store leftovers in an airtight container in the fridge for up to 2 days.
