Balsamic Baked Chicken Breast with Mozzarella Cheese

A comforting dish of chicken breasts baked with a tangy balsamic sauce and topped with melted mozzarella, perfect for family gatherings.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Create the balsamic sauce by whisking balsamic vinegar, honey or maple syrup, dried basil, dried oregano, and minced garlic together.
  4. Sear the chicken in a large skillet with olive oil over medium-high heat for 2–3 minutes on each side until golden brown.
  5. Assemble by placing the seared chicken in the prepared dish and pouring the balsamic mixture over it.
  6. Bake in the oven for 20–25 minutes until the chicken is almost cooked through.
  7. Add the mozzarella cheese on top and return to the oven for an additional 5–10 minutes until the cheese is bubbly and the chicken is fully cooked.
  8. Garnish with fresh basil or parsley, if desired, and serve warm.

Notes

For added flavor, marinate the chicken in the balsamic mixture for a few hours prior to cooking.
