Delicious and nutritious Banana Oatmeal Bars that are easy to make and perfect for any time of day.

Ingredients

  • 1½ cups mashed bananas (approx. 3 bananas)
  • ½ cup nut butter
  • 2 cups rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup
  • 1 cup chocolate chips
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×9 baking pan with parchment paper.
  2. Mash 1½ cups of ripe bananas until smooth.
  3. Add ½ cup of nut butter to the mashed bananas.
  4. Stir in 2 cups of rolled oats, 1 teaspoon of cinnamon, ½ teaspoon of salt, 1 teaspoon of vanilla extract, and 3 tablespoons of maple syrup. Fold in 1 cup of chocolate chips.
  5. Transfer the mixture into the lined baking pan and flatten it into an even layer.
  6. Bake for 18 to 20 minutes, or until the edges are golden and the center is set.
  7. Allow to cool completely in the pan before cutting into squares.

Notes

These bars can be stored in an airtight container at room temperature for up to 2 days, in the refrigerator for up to a week, or frozen for up to 3 months.
