Delicious and healthy Banana Oatmeal Muffins perfect for breakfast or snacks, made with wholesome ingredients.

  • 2 ripe bananas
  • 1 cup whole grain oats
  • 1/2 cup milk (or dairy-free alternative)
  • 1/4 cup maple syrup (optional)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or blueberries (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the bananas in a large bowl until creamy.
  3. Combine the oats, milk, maple syrup (if using), baking powder, baking soda, vanilla extract, and salt with the mashed bananas.
  4. Fold in chocolate chips or blueberries if desired.
  5. Fill the muffin tin evenly with the batter, about three-quarters full.
  6. Bake for 15-20 minutes, or until a toothpick comes out clean.
  7. Cool in the tin for a few minutes before transferring to a wire rack.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. Freeze for up to 3 months.
