A delightful dessert combining rich brownies and creamy banana pudding, perfect for a comforting treat.

  • 1 cup mashed bananas
  • 1/2 cup butter, melted
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 cup vanilla pudding
  • 1/2 cup whipped cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan.
  2. Combine the mashed bananas and melted butter in a mixing bowl. Stir in the brown sugar and granulated sugar until well blended.
  3. Add the eggs and vanilla extract to the banana mixture, mixing well until smooth and creamy.
  4. Whisk together the flour, baking soda, and salt in another bowl.
  5. Gradually mix the dry ingredients into the wet banana mixture until everything is well combined.
  6. Fold in the chopped walnuts or pecans if using, for a delightful crunch.
  7. Pour half of the brownie batter into the prepared pan and spread it evenly.
  8. Pour the vanilla pudding on top of the brownie layer, spreading it out carefully for an even layer.
  9. Spoon the remaining brownie batter over the pudding layer and spread it evenly as best as you can.
  10. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  11. Allow the brownies to cool in the pan before cutting them into squares. Top with whipped cream before serving.

Notes

These brownies can be stored in an airtight container at room temperature for up to three days. For longer storage, refrigerate for up to a week or freeze for up to a month.
