Bang Bang Fried Rice

A vibrant and spicy fried rice dish that’s quick to prepare and perfect for clearing out your fridge.

Ingredients

  • 2 cups cooked rice
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha sauce
  • 2 green onions, sliced
  • 1 egg (optional)
  • 2 tablespoons oil for frying
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large pan over medium heat.
  2. Add the mixed vegetables to the pan and stir-fry for about 3-4 minutes until they soften.
  3. Push the veggies to the side of the pan and crack the egg in. Scramble it until it’s fully cooked, then mix it in with the veggies.
  4. Next, add the cooked rice to the pan and give it a good stir to break up any clumps.
  5. Pour in the soy sauce and sriracha, stirring to ensure every grain of rice is flavored.
  6. Cook for another 2-3 minutes until the rice is heated through and gets a bit crispy at the bottom.
  7. Stir in the chopped green onions, seasoning with salt and pepper to taste.
  8. Serve your Bang Bang Fried Rice hot.

Notes

Use day-old rice for the best texture. Customize with your favorite vegetables or proteins.
