A warm and cheesy casserole layered with savory ground beef, tortillas, and melted cheddar cheese, all topped with tangy enchilada sauce.

  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 10 ounces red enchilada sauce
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Heat the vegetable oil in a large skillet over medium heat.
  3. Add the diced onion and cook until softened, about 3 minutes.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Add the ground beef to the skillet and cook until browned, breaking up the meat with a spoon.
  6. Sprinkle the chili powder, cumin, salt, and pepper over the beef and stir to combine.
  7. Pour half of the enchilada sauce into the beef mixture and let it simmer for 2 minutes.
  8. Spread a thin layer of the remaining enchilada sauce on the bottom of a 9×13 inch baking dish.
  9. Arrange four tortillas in the dish, tearing them if necessary to fit.
  10. Spoon half of the beef mixture over the tortillas and sprinkle with 1 cup of the shredded cheese.
  11. Repeat with the remaining tortillas, beef mixture, and another cup of cheese.
  12. Pour the remaining enchilada sauce over the top, covering evenly.
  13. Bake uncovered for 20 minutes or until the cheese is melted and bubbly.
  14. Let the casserole stand for 5 minutes before slicing and serving.

Notes

Serve with guacamole, sour cream, and a zesty green salad. Store leftovers in the refrigerator for up to 3 days or freeze for 2-3 months.
