Beef Enchiladas

Delicious beef enchiladas filled with seasoned ground beef, black beans, and cheese, baked in rich enchilada sauce.

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) red enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 8 corn tortillas
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the ground beef, onion, and garlic over medium heat until the beef is fully cooked.
  3. Stir in half of the enchilada sauce, cumin, black beans, salt, and pepper.
  4. Roll each tortilla with a portion of the beef mixture and sprinkle with cheese.
  5. Place the rolled tortillas seam-side down in a baking dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with additional cheese.
  7. Bake for 20-25 minutes or until heated through and cheese is melted.
  8. Garnish with fresh cilantro before serving.

Notes

Warm tortillas before filling to prevent breaking. You can use flour tortillas for a different texture.
