A comforting beef stew simmered with tender meat and vibrant vegetables, perfect for chilly nights.

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 4 large carrots, sliced
  • 4 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 bay leaves

Instructions

  1. Heat and brown the beef: In a large pot, heat olive oil over medium heat. Add beef cubes and brown on all sides.
  2. Remove the beef and set it aside. In the same pot, add onion and garlic and sauté until softened.
  3. Stir in the tomato paste and cook for 1 minute.
  4. Add the beef back to the pot along with carrots, potatoes, beef broth, thyme, salt, pepper, and bay leaves.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, until beef is tender.
  6. Remove bay leaves before serving.

Notes
