A creamy, vanilla-infused pudding layered with fresh mixed berries, perfect for a healthy breakfast or snack.

  • 1 cup almond milk (or any milk of choice)
  • 2 tablespoons maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Whisk together the chia seeds, almond milk, maple syrup, and vanilla extract in a bowl. Stir well to combine.
  2. Let it sit for about 10 minutes, then stir again to prevent clumps from forming.
  3. Cover the bowl and refrigerate for at least 2 hours or overnight until the mixture thickens.
  4. Layer the chia pudding with mixed berries in a glass or bowl. Enjoy!

Notes

For added flavor, top with crunchy granola, yogurt, or nuts. Leftover pudding can be stored in an airtight container in the fridge for up to a week.
