A delightful dessert featuring a crisp meringue shell topped with whipped cream and fresh mixed berries.

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon white vinegar
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat the oven to 250°F (120°C). Line a baking sheet with parchment paper.
  2. Beat the egg whites with an electric mixer at medium speed until soft peaks form.
  3. Add granulated sugar gradually, beating until stiff peaks form and the mixture is glossy.
  4. Incorporate the cornstarch and vinegar gently to stabilize the meringue.
  5. Shape the meringue onto the baking sheet, forming a round shape with a well in the center.
  6. Bake for about 1 hour, then let it cool inside the oven.
  7. Whip heavy cream with powdered sugar and vanilla until soft peaks form.
  8. Assemble the pavlova by spreading whipped cream on top and topping with mixed berries.

Notes

Leftovers can be stored for up to 2 days, while toppings should be kept in the fridge for a day.
