A vibrant and delectable Chicken Scampi recipe featuring tender chicken in a creamy, zesty sauce over al dente linguine.

Ingredients

Scale
  • 12 ounces linguine pasta
  • 1 pound boneless skinless chicken breasts, cut into strips
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil
  • 3 tablespoons butter (divided)
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine or chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Boil the pasta by bringing a large pot of salted water to a boil and cooking the linguine according to package directions until al dente.
  2. Prepare the chicken by heating olive oil and 1 tablespoon of butter in a large skillet over medium heat. Season the chicken strips with salt, black pepper, and paprika.
  3. Add the chicken to the skillet and cook for 5 to 6 minutes until golden brown and cooked through.
  4. Create the garlic base by melting the remaining 2 tablespoons of butter in the same skillet and adding the minced garlic and red pepper flakes.
  5. Simmer with white wine or chicken broth, letting it reduce slightly for 2 to 3 minutes.
  6. Build the creamy sauce by stirring in the heavy cream and allowing it to thicken.
  7. Combine everything back in the skillet, adding the cooked chicken, drained linguine, Parmesan cheese, lemon juice, lemon zest, and parsley.
  8. Serve immediately while hot and creamy.

Notes

Serve with a fresh green salad and crusty bread. A crisp white wine pairs beautifully.
