Delightfully fluffy and decadent cinnamon rolls topped with rich cream cheese icing, perfect for any occasion.

Ingredients

  • 45 cups (520g-650g) all-purpose flour, spooned and leveled
  • 1/4 cup (50g) granulated sugar
  • 2 1/4 teaspoons (1 package) instant yeast
  • 1/2 teaspoon salt
  • 3/4 cup (180mL) water
  • 1/2 cup (120mL) whole milk
  • 1/4 cup (60g) unsalted butter, cut into 4 slices
  • 1 large egg, at room temperature
  • 6 tablespoons (85g) unsalted butter, very soft
  • 3/4 cup (150g) packed brown sugar, light or dark
  • 1 1/2 tablespoons ground cinnamon
  • 4 oz (115g) full fat block cream cheese, room temperature
  • 5 tablespoons (70g) unsalted butter, room temperature
  • 1 1/2 cups (195g) powdered sugar
  • 1 teaspoon pure vanilla extract

Instructions

  1. Prepare the dry ingredients: In a large bowl, combine 3 cups of flour, sugar, yeast, and salt. Whisk this mixture until everything is well combined and set aside.
  2. Melt the butter: In a medium microwave-safe bowl, combine the water, milk, and sliced butter. Microwave in 10-second bursts until the butter just melts and the mixture feels warm but not hot.
  3. Mix in the egg: Whisk the egg into the warm water mixture until fully incorporated.
  4. Combine wet and dry ingredients: Pour the wet ingredients over the flour mixture. Mix until you have a very thick and sticky dough.
  5. Gently knead the dough: Add another cup of flour to the dough, mixing it in until it begins to come together into a ball. Knead until smooth, elastic, and slightly tacky.
  6. Let the dough rest: Cover the dough and allow it to rest for 20 minutes.
  7. Roll out the dough: Transfer the rested dough to a floured surface and roll it out into a 14×10 inch rectangle.
  8. Add the filling: Spread the softened butter over the dough, then sprinkle the sugar and cinnamon evenly on top.
  9. Roll up the dough: Starting from the longer side, tightly roll the dough into a log.
  10. Trim the ends: Cut about 1/2 inch off each end of the log.
  11. Slice the rolls: Cut the log into 12 even rolls using a serrated knife or dental floss.
  12. Arrange and let rise: Place the rolls cut side up in a greased 9×13 inch baking dish. Cover and let them rise for about 45 minutes.
  13. Bake the rolls: Preheat the oven and bake for 25-30 minutes, or until golden brown.
  14. Prepare the icing: Combine the icing ingredients until smooth.
  15. Ice the rolls: Spread the icing generously over the warm rolls.

Notes

For a richer icing, add a splash of milk or cream. Store leftovers in an airtight container at room temperature for 2-3 days or freeze for up to 2 months.
