  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 cup fresh raspberries or raspberry jam

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Whisk together the flour, baking powder, and salt in a bowl.
  3. Cream the softened butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, and then stir in the vanilla extract, lemon juice, and zest.
  5. Gradually add the flour mixture to the creamy mixture and mix until just combined.
  6. Pour half of the batter into the prepared pan, smoothing it out evenly.
  7. Drop spoonfuls of raspberries or jam over the batter.
  8. Pour the remaining batter on top, covering the raspberries.
  9. With a knife, gently swirl the raspberry through the batter.
  10. Bake for 25-30 minutes or until a toothpick comes out clean.
  11. Allow to cool completely before slicing into bars.

Notes

For optimal texture, use room temperature butter and avoid thawing frozen raspberries.
