Decadent brownies with a creamy cheesecake layer swirled with fresh raspberries, perfect for any occasion.

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Melt the butter and mix in the granulated sugar until well combined. Add the eggs one at a time, stirring well after each addition, then mix in the vanilla extract.
  3. Whisk together the all-purpose flour, cocoa powder, and salt in another bowl.
  4. Combine the dry ingredients with the butter mixture, stirring gently until just combined.
  5. Layer half of the brownie batter into the prepared pan.
  6. Prepare the cream cheese mixture by blending the softened cream cheese, powdered sugar, and vanilla until smooth, then gently fold in the fresh raspberries.
  7. Assemble the cheesecake brownies by spooning the cream cheese mixture over the brownie batter and dolloping the remaining brownie batter on top before swirling through the layers.
  8. Bake for 30-35 minutes, or until set in the middle. Allow to cool completely before slicing into squares.

Notes

Serve with vanilla ice cream or whipped cream for an extra indulgent dessert. Store leftovers in an airtight container.
