Delicious birria tacos with tender meat and a smoky sauce served in warm corn tortillas, perfect for family gatherings.

Ingredients

  • 2 lbs beef chuck roast
  • 1 lb goat meat (optional)
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 3 dried guajillo chiles
  • 2 dried ancho chiles
  • 3 cups beef broth
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • Corn tortillas
  • Chopped cilantro and onions for garnish
  • Lime wedges

Instructions

  1. Boil the dried chiles until they are soft, about 10 minutes. Then, blend them with chopped onion, minced garlic, cumin, oregano, and a splash of beef broth until smooth.
  2. Sear the beef chuck roast and goat meat (if using) generously with salt and pepper, browning them on all sides, about 5-7 minutes.
  3. Combine the blended chile sauce with the seared meat and pour in the remaining beef broth, stirring to combine.
  4. Simmer the pot covered on low heat for 2-3 hours until the meat is tender and shreds easily.
  5. Shred the meat, serve in warm corn tortillas, and garnish with cilantro, onions, and fresh lime juice.

Notes

For a lighter version, you can substitute the beef with pork or chicken. Use homemade beef broth for richer flavor.
